RAW - Japanese Hand Roll Bar: Authentic, Fresh Sushi & Hand Rolls in Calgary

We stumbled across this spot by chance, but their review rating is well earned. Hand-rolled maki sushi was scrumptious. Chicken karaage and tofu were freshly made and authentic. If you're nearby, I highly recommend it.

Raw handroll Bar was an incredible experience from start to finish. Everything I tried was amazing fresh, flavorful, and beautifully prepared but the salmon belly and the lobster hand roll were the real standouts for me. The balance of textures and flavors was spot on and left a lasting impression. On top of the food, the service was attentive and welcoming, which made the whole experience even better. Easily one of the best sushi spots in Calgary and should be on the Michelin guide at minimum. A place I’ll be coming back to often.

Raw - Japanese Hand Roll Bar offers an impeccable dining experience with standout flavours and fresh ingredients. I would highly recommend trying the tuna carpaccio, Salmon Crudo, and Yuzu Salmon, each dish was exceptionally well-prepared and bursting with flavour. I also took home a salmon sandwich, which was justifiably delicious. Don’t miss out on the off-menu specials, which were a pleasant surprise and added to the overall experience. While the service was good, there is still some room for improvement. That said, the quality of the food and the inviting atmosphere make this place a hidden gem well worth visiting.

My first time visiting with 2 friends and it was an amazing and incredible experience. The drink that I got was the Yuzu sour and it was so delicious and they went down so quickly. I ordered the set with 4 hand rolls and then ordered 2 more premium which was the open scallop hand roll that was seared and the kimchi prawn. I can't wait to return and highly recommend to people. The servers Jordan and Nancy were lovely and attentive as well the chef attending the bar. Thanks for a wonderful, delicious experience tonight!

Loved it here so much! Really great staff, Jordan was super helpful with recommendations. They had awesome hand rolls and we really enjoyed the tuna carpaccio. The scallop special was delightful as well. I didn’t take a tone of photos as I kept eating everything! Highly recommend you drop by and they’re open for lunch a few days a week as well.

RAW nails the balance between speed and top‑tier quality. Each hand‑roll is built right in front of you. Salmon and Tuna rolls were stand outs, with melt in your mouth fish. Taylor’s service made the experience even better. Friendly, attentive, and happy to chat with. Would definitely be back on my next visit to Calgary.

My hubby and I had a great experience here at RAW. Our server was friendly and engaging. They made us feel we were warmly welcomed. Love that we witnessed when the hand rolls were made. And of course, the food itself will entice you to comeback. The the rolls we’ve ordered (seared Hokkaido scallops, negituna, yuzu salmon and creamy scallops) were delicious but our favourite was the cowboy roll (wagyu) which was one of the specials at the time we visited. Will visit again if we drop by downtown Calgary.
